Venison Mexican Meatloaf Recipe

ground venison
bulk ground pork
Mexican blend cheese, shredded
bread crumbs
dried cilantro
Mexican blend cheese, shredded

Oven Temp: 350°
Recipe Cooking Time: 60 to 70 minutes
Pan Type: 9" x 5" meatloaf pan

Venison Mexican Meatloaf Directions

Preheat your oven.

In a large mixing bowl combine the ground venison, ground pork, first amount of mexican blend cheese, bread crumbs, eggs, salsa, cilantro, salt and pepper.
Mix venison meatloaf well.
Turn mexican meatloaf into pan and shape into loaf.
Bake mexican meatloaf in your hot oven uncovered. Cook meatloaf for the allotted time or until the venison is no longer pink in the middle.
Remove venison mexican meatloaf from oven. Cover meatloaf with the second amount of mexican blend cheese.
Let your venison mexican meatloaf set for 10 minutes so cheese can melt before slicing and serving.

Recipe Note: What about making this mexican meatloaf recipe with beef? Smiles, indeed beef does work just the same as venison. Just a bit more fat when you use beef. Make plenty, everyone will want leftover mexican meatloaf sandwiches.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup.
