Roasted Goose Recipe

1 whole
1 small
1 stalk
goose
onion
celery

salt
pepper

Oven Temp: 325°
Recipe Cooking Time: see below
Pan Type: roasting pan


Roasted Goose Directions

Thaw a frozen goose in the refrigerator for 12 to 24 hours depending on size.
Rinse the goose inside and out and pat dry with paper towels.
Place the goose, breast side up on rack on shallow roasting pan.
Sprinkle inside and out with salt and pepper.
Peel the onion and rinse, place inside of the goose.
Wash the celery and place inside the goose as well.
Cook per chart below according to weight of the goose.
I like to give an extra half hour when I am roasting meat because of variations in oven temperatures.
To keep the roasted goose from burning, cover it with foil while cooking.
Enjoy your roasted goose!

Recipe Note: You can readily purchase a goose at the grocery store year round in the freezer section.
During the holidays most butchers will take orders for a fresh goose. Goose is very fatty bird.
You will want to remove as much fat as possible from the inside and outside before cooking.

4 – 6 pounds – 2 3/4 to 3 hours.
6 – 8 pounds – 3 to 3 1/2 hours.
8 – 10 pounds – 3 1/2 to 3 3/4 hours.
10 – 12 pounds – 3 3/4 to 4 1/4 hours.
12 – 14 pounds – 4 to 4 3/4 hours.
