Swiss Round Elk Steak Recipe

2 pounds
1 tablespoon
1/4 cup
2 tablespoons
1 cup
1 tablespoon
1 – 8 ounce package
round elk steak
prepared mustard
olive oil
beef broth
Worcestershire sauce
fresh mushroom, sliced

salt & pepper to taste

Temp: medium
Recipe Cooking Time: 30 minutes
Pan Type: large skillet

Elk Steak Directions

Cut elk steak into serving size pieces.
Dredge the elk steaks in flour.
Add oil to skillet and heat.
Brown the round steaks, when meat is nicely brown add the mushrooms, Worcestershire sauce and beef broth.
Reduce heat and simmer the steaks.
Cover and cook swiss elk round steaks for 30 minutes or until elk meat is fork tender.

For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup.
