Fried Sweet Mesquite Zucchini

3 tablespoons
1 medium*
1/3 package
1   1/2 tablespoons
1 tsp.
1/2 tsp.
1/2 cup
1/2 cup
virgin olive oil
zucchini, sliced 1" thick
Ritz crackers
sweet mesquite seasoning
all purpose flour
egg substitute

Recipe Pan Type: large skillet

Fried Zucchini Recipe Directions

Heat the oil in a large skillet.

Blend the ritz crackers in a blender until fine.
Combine thoroughly the cracker crumbs, seasoning, sugar, cinnamon and flour in a mixing bowl.
Dip sliced zucchini into the egg and then into the cracker mixture.
Fry sweet mesquite zucchini uncovered, over medium heat until tender, about 10 to 12 minutes.
Turn zucchini squash once with a fork.
When vegetables are done to golden brown, transfer from the skillet to a serving dish.

* 1 medium zucchini = 2 inches round by 14 - 16 inches long. Picked just before the seeds start to form inside.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. These changes will give your favorite recipes great new flavor, and your food will be healthier!
