Spinach Rice Recipe

1/2 cup
1 1/2 cups
1/2 teaspoon
2 cups
1/2 cup
1 – 10 ounce package
1 cup
1 clove
1/8 teaspoon
1/2 teaspoon
long grain rice
olive oil
onion, chopped fine
chopped frozen spinach, thawed
sharp cheddar cheese, shredded
garlic, minced
ground black pepper

nonstick pan spray

Oven Temp: 325°
Recipe Cooking Time: 30 to 40 minutes
Pan Type: 2 quart casserole

Spinach Rice Directions

Preheat your oven and spray the dish.

Cook rice in 1 1/2 cups of water and olive oil according to package directions.
Squeeze all of water out of thawed spinach and let spinach set in a colander while preparing other recipe ingredients.
In a large bowl beat the eggs.
Add milk, chopped onion, garlic, pepper and salt.
Mix well.
Add cooked rice and drained spinach, stir well.
Mix in the cheddar cheese and pour into dish.
Bake this yummy spinach rice for the allotted time.

Recipe Serves: about 6

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
