Basic Mashed Potatoes Recipe

2 pounds
1/2 – 3/4 cup
1/4 cup
3/4 – 1 teaspoon
1/2 teaspoon
1/2 teaspoon
russet potatoes
onion powder

Stove Temp: medium/low
Recipe Cooking Time: 20 to 30 minutes
Pan Type: sauce pan

Mashed Potatoes Directions

Peel the potatoes and cut into 8's.
Put potatoes into pan and add enough water to cover 1/2 inch above potatoes.
Bring them to a boil on high heat.
Reduce to medium low, cover and cook potatoes for about 12 minutes or until fork test says tender.
Remove from stove and drain potatoes well.
Transfer potatoes to large mixing bowl.
Mix at low speed of mixer for about 1 minute.
Add butter, first amount of milk, salt, pepper and onion powder. Mix on high speed of mixer until fluffy and mashed.
Add milk to reach desired mashed potatoes consistency.
Serve basic mashed potatoes immediately.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
