Roasted Beets and Zucchini Recipe

Roasted beets taste wonderful both warm and cold. Use the left overs to toss in a salad with blue cheese.
Beets, cut in 1/2 inch cubes or thin slices (beets take longer to cook than any other veggie)

Roasted Beets and Zucchini wrapped in foil.
2 pounds beets, washed and peeled
1 pound of zucchini, sliced
1 tablespoon olive oil
1 sweet onion, chopped
1/2 teaspoon salt, pepper, thyme, savory, sage, rosemary, basil, curry spice, garlic. You don't need to use them all at once, just whatever you like and have on hand.

Roasted Beets and Zucchini Directions

Wash the beets, trim and scrub the skin. Quarter or chunk them.

Wash and trim zucchini and slice into chunks. Prepare a foil bag and place vegetables in the bag.
Sprinkle the vegetables with salt and smokehouse maple seasoning, wrap the foil together and fold the ends over so juices will not leak out.
Place on the grill and cook at 350 degrees for about 30 minutes.

Turn over midway through the cooking and check to make sure things are not getting over done.
Everything will caramelize and it's wonderful!

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
