Broccoli and Cheese Recipe

2 pounds
1 large

broccoli
onion, chopped fine
butter
flour
milk
salt
pepper
egg yolk, beaten
fresh grated Parmesan cheese
crackers, crushed
butter, melted

Oven Temp: 400°
Recipe Cooking Time: 20 to 25 minutes
Pan Type: 2 quart casserole


Broccoli and Cheese Directions

Preheat your oven.

Wash broccoli and cut into 1 1/2 inch pieces, or split the larger stems.
Put broccoli into a steamer basket and steam until broccoli is firm tender, takes about 5 to 10 minutes.
Meanwhile, put butter into a medium saucepan and melt over medium heat.
Add the onion and cook until tender.
Add flour, salt and pepper, stir to make a paste.
Gradually add the milk, stirring constantly until a thickened sauce.
Put egg yolk into a small bowl.
Add about 2 tablespoons of the sauce and quickly stir.
Add the rest of the sauce mixture and mix well.
Stir in the cheese next.
Put 1/2 of cheese sauce into the bottom of a 2 quart baking dish.
Arrange broccoli on top of cheese sauce.
Top broccoli with remaining cheese sauce.
Melt the butter in a microwave safe dish, add crushed crackers then toss to coat.
Sprinkle on top of broccoli and cheese. Bake broccoli and cheese recipe till done the way you like.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
