Cheese Potato Soup Recipe

1/3 cup

1/3 cup
2 cups
2 cups
3 large
1/2 teaspoon
1/4 teaspoon
1/4 teaspoon
4 ounces
6 medium
onion, chopped
chicken broth
half and half
baking potatoes, baked
mustard powder
cheddar cheese, shredded
green onions sliced, optional

Stove Temp: medium
Recipe Cooking Time: 15 minutes
Pan Type: large saucepan

Cheese Potato Directions

Cheese potato soup recipe, a good warm up on a cold day.

Peel and cube baked potatoes, set aside.
In a pan melt the butter.
Add the chopped onion and cook until onion is tender.
Add the flour and stir to make a paste.
Slowly add the chicken broth and half and half.
Cook over medium heat until mixture is near boiling and thickened.
Add the potatoes, salt pepper, ground mustard and shredded cheese.
Cook cheese potato soup recipe on medium stirring constantly for 10 minutes or until heated through and cheese is melted.
Ladle the cheese potato soup into bowls and garnish with green onions if desired.

Note: This is a great way to use leftover baked potatoes. I usually bake extra potatoes to use in soups or for hash browns.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
