Black Bean Soup Recipe

meaty ham bone or ham hock
black beans
olive oil
green bell pepper, chopped
onion, chopped
oregano
cloves garlic, chopped
ground cumin
pepper
cayenne pepper
teaspoons salt

Stove Temp: simmer
Recipe Cooking Time: 1 1/2 hours
Pan Type: soup pot


Black Bean Soup Directions

Place black beans in a colander, look through the beans to see if there are any rocks and remove if there is.
Rinse black beans well in cold water.
Cover beans with 2 quarts of water and soak overnight.
Next day, drain the beans and rinse off foam if any.
Return black soup beans to pan.
Add 2 quarts of fresh water.
Put ham bone into pan.
Heat the oil in a small skillet, add the chopped pepper, onions, garlic and cook until vegetables are tender.
Add to the black beans.
Add the oregano, cumin, pepper and cayenne.
Stir bean soup well.
Bring soup mixture to a boil.
Reduce heat, cover and simmer for the allotted time or until beans are tender.
Season black bean soup with salt and serve.

Note: I like black beans served over white rice with fresh chopped onions and banana peppers on top. Yummy!

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
