Black Bean Soup Recipe

meaty ham bone or ham hock
black beans
olive oil
green bell pepper, chopped
onion, chopped
oregano
cloves garlic, chopped
ground cumin
pepper
cayenne pepper
teaspoons salt

Stove Temp: simmer
Cooking Time: 1 1/2 hours
Pan Type: soup pot

Place beans in a colander look through the beans to see if there are any rocks and remove if there is.
Rinse well in cold water.
Cover with 2 quarts of water and soak overnight.
Next day drain the beans and rinse off foam if any.
Return beans to pan.
Add 2 quart fresh water.
Put ham bone in pan.
Heat the oil to a small skillet, add the chopped pepper, onions and garlic and cook until vegetables are tender.
Add to the beans.
Add the oregano, cumin and pepper and cayenne.
Stir well.
Bring mixture to a boil.
Reduce heat, cover and simmer for the allotted time or until beans are tender.
Season with salt and serve.

Note: I like black beans served over white rice with fresh chopped onions and banana peppers on top. Yummy!
