Black Bean and Bacon Soup Recipe

4 slices
1 large
2 cloves
1 – 14 ounce can
1 large
1 small
2 – 16 ounce can
1/2 teaspoon
1/8 teaspoon
1/2 cup
4 ounces
1/2 cup
regular cut bacon
onion, chopped
garlic, minced
chicken broth
carrot, chopped
red bell pepper
black beans
ground cumin
pepper
chunky taco sauce
cheddar cheese
onion, chopped

Stove Temp: simmer
Recipe Cooking Time: 30 minutes
Pan Type: 2 quart saucepan


Black Bean and Bacon Soup Directions

Chop the bacon and cook until crisp.
Remove bacon and drain on paper towels.
Drain off all bacon fat.
Add the onion and garlic and cook until tender.
Add the chicken broth, diced carrots and chopped pepper. Bring soup vegetables to a boil.
Cover and simmer for 15 minutes.
Add the beans, cumin, pepper and taco sauce.
Cook black bean and bacon soup for the reminder of time or until tender.
Ladle black bean soup into bowls and top with shredded cheddar cheese and raw onion.

Recipe Serves: 4 – 6

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
