Beef Tortilla Soup Recipe

Beef Tortilla Soup from Katie D

Beef Tortilla soup recipe combines all the things I love best in Mexican cooking. Tortilla soup is like a soup version of my favorite enchilada, with beef, and tortilla chips, topped with sour cream and cheese.

1 pound ground beef
1 large onion, chopped
1 large green pepper, chopped
2 cloves garlic, minced
1 – 16 ounce can Italian tomatoes
1 – 16 ounce can Mexican style tomatoes
1 – 16 ounce can Santa Fe beans
1 – 16 ounce can pinto beans
1 – 16 ounce can whole kernel corn
1 package taco seasoning
1 envelope ranch dressing mix
32 ounces beef broth
4 flour tortillas, cut in 1/4 inch strips
1 tablespoon vegetable oil
1 cup sour cream, optional
4 ounces cheddar cheese, shredded, optional

Stove Temp: low
Recipe Cooking Time:
Pan Type: large stock pot

Beef Tortilla Soup Directions

In the pot cook the ground beef, chopped onions, chopped green pepper and minced garlic until meat is no longer pink in the middle, takes about 10 minutes.
Drain and return beef to soup pot.
Add the un drained tomatoes, un drained beans and drained corn.
Add the taco seasoning, ranch dressing mix and beef broth. Stir well.
Bring tortilla soup mixture to a boil.
Reduce heat and simmer for 35 minutes uncovered.
Heat oil in skillet.
Add cut tortilla strips.
Cook tortilla in hot oil while turning often until lightly brown.
To serve, ladle beef tortilla soup into bowls.
Top with browned tortillas, cheddar cheese and a dollop of sour cream if desired.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup.
