Taste of Italy Soup made with Quinoa

1 pound beef with bone
3 1/2 cups water
1 large onion, chopped
2 cloves garlic, minced
3/4 cup celery, sliced thin
1 – 16 ounce can kidney beans
1/8 teaspoon ground black pepper
1 cup green peas
2 cups cabbage, chopped
2 large carrots, sliced
2 – 16 ounce cans ready cut tomatoes
1 cup quinoa or spaghetti noodles broken
1 tablespoon salt

Oven Temp: low
Recipe Cooking Time:
Pan Type: stock pot


Taste of Italy Soup Directions

Place soup bone into the soup pot along with the water.
Bring to a boil, reduce heat and simmer for 4 hours.
Skim off fat.
Remove bones from soup pot and cut the meat off the bones. Return meat to the pot.
Add the chopped onion, celery, garlic, kidney beans, ground black pepper, peas, chopped cabbage, carrots and ready cut tomatoes.
Cook Italy soup until vegetables are all tender.
Add the broken spaghetti and simmer until tender.
Add up to 1 tablespoon salt.

Recipe Serves: 8
