Sweet Potato Soup with Seared Tomatillos Recipe

Katie decided to purchase a new Vitamix and couldn't wait to try this Sweet Potato Soup with Seared Tomatillos recipe. Here are her comments. (I made this today. Blended a lime for lime juice. First time trying tomatillos. Pretty spicy. Use less jalapeno if you don't like hot.)

2 Tablespoons grapeseed oil
1 pound smoked ham
1 pound onions, peeled and diced
1 jalapeno, seeded and diced
2 bay leaves
4 inch cinnamon stick
3 garlic cloves, peeled and sliced
1/4 pound bell peppers seeded and diced
1 Tablespoon ground coriander seed
1 cup dry white wine
2 pounds sweet potatoes, peeled and diced
7 cups organic chicken broth
1 teaspoon Kosher salt
1/4 teaspoon fresh ground black pepper

Garnishes

1 1/2 pounds small tomatillos, husks removed and cut in small wedges
2 Tablespoons grapeseed oil
2 jalapenos, seeded and diced
2 Tablespoons lime juice
2 Tablespoons sugar
1 cup cilantro leaves
salt and pepper to taste


Recipe Cooking Time:
Pan Type: large soup pot

Sweet Potato Soup Directions

Add grapeseed oil to medium hot stockpot, add the smoked prk and render for 3 minutes. Add the onions, jalapeno, bay leaves, cinnamon stick, garlic and peppers, simmer for 5 minutes.
Add the coriander and saute for 1 minute.
Add the wine and cook untill reduced by two thirds. Add in the potatoes and broth, salt and peper and bring to a boil. Simmer for stated time.
Add half the mixture to a vitamix or equivilant strength processor.
Blend for 20 seconds until all ingredients are blended. Repeat with remaining mixture.
Heat a saute pan until very hot. Toss the tomatillos with the remaining grapeseed oil, season with salt and pepper. Add to the hot pan and sear. Cook for 1 minute.
Add in the jalapenos and cook another 30 second, add the lime juice and sugar, cooking for an additional 3 minutes.

Divide the tomatillos between 8 bowls. Sprinkle the cilantro leaves in the bowl. Ladle the hot soup over the leaves and around the tomatillos and serve.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
