3 Bean Soup Recipe

Cooler weather is here, it's time for a warm inviting batch of 3 bean soup.
The amazing flavors of canadian bacon and homemade salsa combined with the Better Than Bouillon Organic vegetable base creates a meal you will want time and time again.

2 Tablespoons olive oil
12 oz canadian bacon, diced
2 garlic cloves, minced
28 oz petite diced tomatoes
2 15-oz cans black beans
2 15-oz cans kidney beans
2 15-oz cans pinto beans
2 cups homemade salsa
16 oz tomato sauce
1 small can sliced olives
1 cup finely diced green bell pepper
2 teaspoons Better Than Bouillon Organic Vegetable Base
1 1/2 teaspoons fresh thyme
shredded cheddar and chopped cilantro for topping



Stove Temp: low
Recipe Cooking Time: 20 minutes
Pan Type: large saucepan


3 Bean Soup Recipe Directions

Saute canadian bacon and garlic in olive oil until golden. Add all remaining ingredients except cheddar cheese and cilantro. Bring to a boil, cover, reduce heat, and simmer until completely heated through. Serve topped with shredded cheddar and cilantro.

3 Bean Soup recipe makes 4-6 servings.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
