Cheesy Fish Chowder Recipe

2 cups
1 cup
2 large
1 1/2 cups
2 tablespoons
1 teaspoon
1/8 teaspoon
1 pound
1 1/2 cups
8 ounces
1/4 cup
onion, chopped
potatoes, cubed
celery, chopped
carrots, chopped
fish fillets, cooked, diced
half & half
sharp cheddar cheese
chives, chopped, optional

paprika, optional

Recipe Pan Type: large saucepan

Fish Chowder Directions

Combine the water, potatoes, celery and carrots into a large saucepan.
Bring mixture to a boil.
Reduce heat and simmer until the vegetables are tender.

In the meantime melt the butter in a medium saucepan.
Add the onion and saute until tender. Add the flour salt and pepper. Stir to make a paste.
Slowly add the half and half. Use a wire whisk to blend.
Add flour mixture to potato mixture when vegetables are tender.
Stir in fish and cheese.
Cook fish over medium heat until cheese melts and fish chowder is heated thoroughly.

Ladle cheesy fish chowder into bowls and garnish with chives. Sprinkle with paprika if desired.

Serve cheese fish chowder with lots of your favorite crackers.
