Chili Con Carne Recipe

1 large
1 cup
1/2 cup
2 cloves
1 – 16 ounce can
1 cup
1/2 cup
1 teaspoon
1 tablespoon
1 teaspoon
1/8 teaspoon
1/8 teaspoon
1 – 16 ounce can
ground beef
onion, chopped
celery, chopped
green pepper, chopped
garlic, minced
ready cut tomatoes, un drained
tomato puree
ground cumin
chili powder
cayenne pepper
kidney beans

Stovetop Temp: simmer
Recipe Cooking Time: 45 minutes
Pan Type: large saucepan

Chili Con Carne Directions

In a large skillet brown the beef, onion, celery, green pepper and garlic until meat is no longer pink.
Drain chili meat and veggies and put into a large saucepan.
Add the tomatoes, tomato puree, ketchup, cumin, chili powder, salt, pepper, cayenne pepper and kidney beans.
Mix chili well. Bring con carne mixture to a boil.

Reduce heat, cover and simmer chili con carne for 45 minutes.

Ladle chili into bowls and serve with your favorite crackers.

Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup.
