Meatloaf Sandwich Recipe

2 pounds
2 large
1 cup
1/2 cup
1/4 cup
1/2 cup
1 teaspoon
1/2 teaspoon
1/8 teaspoon
1/2 teaspoon
1/2 cup
lean ground beef
saltine cracker crumbs
onion, chopped
green bell pepper, chopped
Worcestershire sauce
ground black pepper
garlic powder

sliced sandwich bread, buttered
American cheese slices, optional

Oven Temp: 350°
Recipe Cooking Time: 60 to 75 minutes
Pan Type: 9" x 5" meatloaf pan

Meatloaf Sandwich Directions

In a large mixing bowl combine the ground beef, eggs, cracker crumbs, chopped onion, chopped green pepper, first amount of ketchup, Worcestershire sauce, salt, ground black pepper, and garlic powder.
Mix meatloaf all together and mix well.
Put meatloaf mixture into a loaf pan and shape into loaf.
Pour remaining ketchup over the top of the meat loaf.
Bake meatloaf uncovered for the allotted time or until meat thermometer reaches 170°F when inserted into middle of meat.
Remove meatloaf from oven.
Let the meat loaf set for 10 minutes or more before removing from loaf pan.
To serve meatloaf sandwich, put a slice of meat loaf between two slices of buttered sandwich bread.
Top meatloaf sandwich with a slice of American cheese if desired.
Great hot or cold, meatloaf sandwiches are great served up with your favorite chips.

Note: This meatloaf recipe stores well and can be frozen.
I like to make this for my guys when they go hunting.
It is a fast fix for them when they come back to camp from a long fun day.

Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
