White Potato Salad Recipe

1/4 teaspoon
white potatoes
eggs, hardboiled
celery, sliced thin
onion, chopped
prepared mustard
ground black pepper

White Potato Salad Directions

Place eggs in a sauce pan. Cover eggs with water. Bring to a boil over high heat. When eggs start to boil, turn burner off and cover pan with tight fitting lid.
Let eggs sit on “off” burner for 20 minutes.
After 20 minutes, run cold water over the eggs. Peel and set eggs aside.
Peel the white potatoes. Place peeled potatoes in 3 quart saucepan. Add enough water to cover the white potatoes. Bring to a boil, then reduce heat. Cover and cook white potatoes over medium low heat.
Cook 30 - 40 minutes or until you can easily poke a fork into the middle of potatoes. Transfer potatoes to a colander to cool completely. When white potatoes are cooled, cut into cubes and place in a large salad bowl.

Chop 4 of the eggs and add to the potatoes.
Add sliced celery and chopped onions. Toss potato salad together.

In a small bowl combine the mayonnaise, mustard, vinegar, salt and pepper. Mix well and pour over white potato mixture.
Gently stir mayonnaise mixture into the potatoes.
Spoon the white potato salad into a large salad serving bowl.
Slice remaining eggs and lay on salad top for garnish.
Cover potato salad with plastic wrap. Refrigerate 4 hours or longer before serving white potato salad recipe.

Sprinkle salad with paprika just before serving.
