White Rice Salad Recipe

2 cups
1 small head
1 cup
1/2 cup
1 small can
2 cups
1/4 – 1/2 teaspoon
1/8 teaspoon
cooked white rice**
cauliflower
celery, sliced
green onions, sliced
black olives, sliced and drained
mayonnaise
salt
ground black pepper

Recipe Pan Type: large salad serving bowl


Rice Salad Directions

Cook enough white rice to make 2 cups cooked rice.
Rinse and drain white rice after cooking.
Place rice into a large salad bowl.
Cut cauliflower into small bite size pieces.
Add cut cauliflower to the rice.
Add sliced celery, sliced green onions, drained black olives, mayonnaise, salt and ground black pepper.

Mix well and put white rice salad into the refrigerator to cool for several hours or overnight.
Stir rice salad before serving and add more mayonnaise if it is too dry.

**1 cup uncooked rice yields about 2 cups cooked rice.

Recipe Serves: 8 – 10
