Green Bean Salad Recipe

Just cook the fresh green beans for 15 minutes in chicken stock, drain and sprinkle a little vinegar, olive oil, salt and pepper.
I like to use green pepper rings on the bean salad for garnish.

1 lb fresh green beans, cooked and drained
16 oz fat free chicken stock

1 can black beans, drained
1 can garbanzo beans, drained
1/2 cup chopped onion chopped
1/2 cup chopped bell pepper (optional)

Sauce 1/4 cup stock reserved from boiling the green beans
3 tablespoon vinegar
3 tablespoons olive oil
Herbs , like an Italian seasoning blend, or dill weed, fresh or dried.

Bean Salad Directions

Put all the drained beans, onion and pepper in a bowl with a lid. If the green beans are large they can be a bit tough and folks like to French cut them either with a tool or you can slice them long ways with a knife.
In a separate bowl add 1/4 cup of reserved stock, oil, vinegar and seasonings, mix well. Pour the dressing over the salad and toss.
Chill bean salad for several hours or overnight in the refrigerator.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
