Colorful Tasty Potato Salad Recipe

3 1/2 pounds
3 1/2 pounds
1 bunch
1/2 cup
1/3 cup
1 – 4 ounce jar
1 cup
1/4 cup
2 teaspoons
1/2 teaspoon
1/4 teaspoon
2 tablespoons
red potatoes
yellow potatoes
eggs, hard boiled
green onions, sliced
purple onion, chopped
dill pickles, chopped
pimentos, diced
celery seed
granulated sugar

Recipe Cooking Time: 35 to 45 minutes
Pan Type: large stock pot

Potato Salad Directions

Wash tasty potatoes and place in large pot. Cover with water, bring to a boil, reduce heat and cook for the allotted time or until tender. Remove potatoes from pan and place in large bowl.
Cool to room temperature. Cover and refrigerate potatoes for hours.
Peel potatoes and cut into small cubes.
Chop the hard boiled eggs and add to the potatoes.
Add sliced green onions (tops included), chopped purple onions, chopped pickles and diced pimentos.
Toss gently.
Add the mayonnaise, mustard, salt, celery seed, pepper and granulated sugar. Mix well.
Cover potato salad and refrigerate for several hours before serving so flavors can marinate.
