Colorful Tasty Potato Salad Recipe

1 bunch
1/2 cup
1/3 cup
1 – 4 ounce jar
1 cup
1/4 cup
2 teaspoons
1/2 teaspoon
1/4 teaspoon
2 tablespoons		 red potatoes
yellow potatoes
eggs, hard boiled
green onions, sliced
purple onion, chopped
pickles, chopped
pimentos, diced
mayonnaise
mustard
salt
celery seed
pepper
granulated sugar

 

Recipe Cooking Time: 35 to 45 minutes
Pan Type: large stock pot

 

Wash potatoes and place in large pot. Cover with water, bring to boil reduce heat and cook for the allotted time or until tender. Remove from pan, and place in large bowl.
Cool to room temperature. Cover and refrigerate for hours.
Peel potatoes and cut into small cubes.
Chop the eggs and add to the potatoes.
Add sliced green onions (tops included), chopped purple onions, chopped pickles and diced pimentos.
Toss gently.
Add the mayonnaise, mustard, salt, celery seed, pepper and granulated sugar. Mix well.
Cover tasty potato salad and refrigerate for several hours before serving so flavors can marinate.
