Colorful Potato Salad

This pretty salad - made with white and sweet potatoes - tastes as good as it looks. The mild dressing enhances the tender spuds and onion, especially if you refrigerate it overnight.

3 1/2 pounds white potatoes
3 1/2 pounds sweet potatoes
1 bunch onion, chopped
7 hard boiled eggs
1\2 cup purple onion, chopped
1\2 cup dill pickle
4 ounce jar pimentos
1 cup mayonnaise
1/4 cup mustard
2 teaspoons salt
1/2 teaspoon celery seed
1/4 teaspoon pepper

Colorful Potato Salad Directions


Wash potatoes and place in large pot. Cover with water, bring to a boil, reduce heat and cook for the alotted time or until tender. Remove potatoes from pan and place in large bowl.
Cool to room temperature. Cover and chill potatoes in refrigerator before adding additional ingredients.
Peel potatoes and cut into small cubes.
Chop the hard boiled eggs and add to the potatoes.
Add sliced green onions (tops included), chopped purple onions, chopped pickles and diced pimentos.
Toss gently.
Add the mayonnaise, mustard, salt, celery seed, and pepper. Mix well.
Cover potato salad and refrigerate for a couple of hours before serving so flavors can marinate.
