Carrot Raisin Salad Recipe

1 1/2 cups
1/2 cup
1/2 cup
1/4 teaspoon
1/2 cup
1/4 cup
1 cup

raw carrots, shredded
seedless raisins
celery, chopped
salt
walnuts, chopped fine
mayonnaise
boiling water


Recipe Container Type: salad serving bowl


Carrot Raisin Salad Directions

Put raisins in a colander. Pour boiling water over raisins slowly, let drain completely.
Transfer raisins to bowl.
Add shredded carrots, chopped celery, salt, chopped walnuts and mayonnaise.
Mix carrot raisin salad well. Cover and refrigerate salad for 2 hours before serving.

Recipe Serves: about 6

Note: I use a Cuisinart food processor for shredding my carrots, chopping my celery and the walnuts. It works great and saves time in the kitchen.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
