Fancy Tortellini Salad Recipe

1 – 9 ounce package
1 medium
1 large
1/4 cup
1 small can
1/4 cup
1 pint
1/3 cup
1/4 teaspoon
1/4 cup
fresh cheese filled tortellini
zucchini, quartered and sliced thin
carrot, sliced thin
fresh parsley, chopped
whole pitted black olives, pitted, drained
purple onion, chopped
grape tomatoes
ranch dressing
ground black pepper
parmesan cheese, grated

Recipe Prep Time: 15 minutes
Container Type: large serving bowl


Tortellini Salad Directions

Cook the tortellini according to package direction.
Pour tortellini into a colander. Rinse tortellini with cold water and set aside to drain while preparing the salad vegetables.
Wash zucchini and peel the carrots. Cut the zucchini into quarters and slice thin. Put into a large salad bowl.
Thin slice the carrot and add to zucchini.
Add chopped parsley. Open the olives, drain and add to zucchini mixture.
Add the chopped purple onions and grape tomatoes to salad.
Toss salad all together to blend.
Add the drained cooked tortellini, grated cheese and ranch dressing.
Gently stir tortellini salad to blend.
Cover fancy tortellini salad and refrigerate for 30 minutes before serving.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup.
