Fancy Tortellini Salad Recipe

Tortellini Salad with costco Tortellini

Fancy Tortellini salad is among my make-ahead favorites, it's a big hit every time I serve it.
Easy to adjust to with any of your favorites, adding black beans and olives to the salad will give it a southwestern meal flavor.

1 pkg. (9 oz.) uncooked refrigerated cheese-filled, (Costco has really good tortellini as well)
1 medium zucchini, thinly sliced
1 cup baby carrots, chopped
1 pint cherry or grape tomatoes, halved
4 green onions with tops, thinly sliced
1/4 cup snipped fresh parsley (or 4 tsp. dried parsley)
1/2 cup home-made or you’re favorite ranch dressing
3/4 teaspoons salt
1/4 teaspoon pepper
Parmesan Cheese – to taste

Tortellini Salad Directions

Cook the tortellini according to package direction.
Pour tortellini into a colander. Rinse tortellini with cold water and set aside to drain while preparing the salad vegetables.
Wash zucchini and peel the carrots. Cut the zucchini into quarters and slice thin. Put into a large salad bowl.
Thin slice the carrot and add to zucchini.
Add chopped parsley.
Add the chopped onions and grape tomatoes to salad.
Toss salad all together to blend.
Add the drained cooked tortellini, grated cheese and ranch dressing.
Gently stir tortellini salad to blend.
Cover fancy tortellini salad and refrigerate for 30 minutes before serving.
