Salami Pasta Salad Recipe

2 cups
8 ounces
1 tablespoon

2 tablespoons
1/3 cup
1/2 cup
2/3 cup
1/3 cup
1/3 cup
1 – 16 ounce can
1/4 cup
1/2 cup
1/4 cup
curly pasta
salami
olive oil
garlic, minced
white vinegar
extra virgin olive oil
chunky salsa, mild
red bell pepper, chopped
yellow bell pepper, chopped
Anaheim chili pepper, chopped
black beans, drained
fresh cilantro, chopped
sliced black olives
feta cheese, crumbled

Recipe Container Type: large salad serving bowl


Salami Pasta Salad Directions

Cook pasta according to package directions.
Drain and rinse pasta well. Place drained pasta into a large salad serving bowl.
Cut salami into quarters, slice thin and add to pasta.
Heat the first amount of oil in a skillet. Add the garlic and sauté until lightly brown.
Add the vinegar and second amount of oil.
Mix well with wire whisk. Add the salsa, peppers, drained beans, chopped cilantro and drained black olives.
Mix together well and add to pasta.
Toss salami pasta salad well to coat.
Chill pasta salad at least 30 minutes before serving.

Sprinkle salami salad top with crumbled feta cheese just before serving.

Recipe Serves: about 8
