Macaroni Salad Recipe

Favorite Macaroni Salad

16 ounces
1 small
2 ounce jar
1 cup
1/2 cup
1/2 cup
1 cup
1/2 teaspoon
1/4 teaspoon
2 cups
elbow macaroni
onion, chopped
pimentos, chopped
pickles. chopped
black olives, sliced
green olives, sliced
Mexican cheese blend, shredded

Recipe Container Type: salad mixing bowl

Macaroni Salad Directions

Cook the macaroni pasta according to the package directions.
Rinse macaroni in cold water and let drain while preparing other ingredients.
Chop the onion and place into a salad large bowl.
Open pimentos, drain and add to the salad bowl. Add the onions.
Chop the pickles and add to to onions. Add the sliced black and green olives. Add the cooked and drained macaroni pasta.
Toss macaroni salad gently.
Add the shredded cheese, salt, pepper and mayonnaise.
Mix the macaroni salad well.
Cover and refrigerate salad for several hours or overnight is even better.

Recipe Note: Mixing a little salsa into the mayonnaise and serving along with corn chips, adds a little southwestern flair to your macaroni salad.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
