Good & Hot Chicken Salad Recipe

1/2 teaspoon
1/8 teaspoon

1 cup
cream of chicken soup
chicken, cooked and diced
rice, cooked
water chestnuts, drained
hard boiled eggs, chopped
celery, diced
ground black pepper
onion, grated
lemon juice
potato chips, crushed

Hot Oven Temp: 375°
Recipe Cooking Time: 30 minutes
Pan Type: 2 1/2 quart casserole dish

Chicken Salad Directions

Preheat to hot oven.

In a large bowl combine the cream of chicken soup, cooked diced chicken, cooked rice, drained water chestnuts, mayonnaise, chopped hard boiled eggs, celery, salt, ground black pepper, grated onion, and lemon juice.
Mix good chicken salad well.
Spoon chicken out and into a 2 1/ 2 quart casserole dish.
Top with your favorite crushed potato chips.
Cook hot chicken salad for about 30 minutes or until done.

Recipe Serves: 6 – 8

Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
