Cranberry Fruit Salad Recipe

1 1/2 cups
1 – 6 ounce
1 – 16 ounce can
2 – 11 ounce cans
1 1/2 cup
1/4 cup
1/2 cup
1 – 8 ounce
1/4 cup
1 – 8 ounce
1 – 5 ounce can
boiling water
cranberry raspberry gelatin
whole berry cranberry sauce
mandarin oranges, drained
graham cracker crumbs
granulated sugar
butter, melted
cream cheese, softened
granulated sugar
Cool Whip, thawed
crushed pineapple, drained

Recipe Pan Type: 9 x 13" baking pan



Cranberry Fruit Salad Directions

In a large mixing bowl combine the boiling water and cranberry raspberry gelatin. Stir until cranberry gelatin is completely dissolved.
Add the whole berry cranberry sauce, then stir until completely melted.
Add drained mandarin oranges.
Mix cranberry fruit salad well and place into refrigerator until salad is slightly set up.
In the meantime, in a medium bowl combine the graham cracker crumbs, granulated sugar, and melted butter.
Mix well and press crust dough firmly into bottom of pan.
In a large mixing bowl beat the cream cheese until smooth.
Add the sugar and beat cream cheese until fluffy.
Add drained crushed pineapple and beat until well blended.
Fold in thawed Cool Whip.
Spread the cream cheese mixture into bottom of pan.
Cover and refrigerate until gelatin is slightly set.
Gently pour gelatin mixture over top of cream cheese mixture.
Refrigerate cranberry fruit salad for several hours or overnight.

Salad Recipe Serves: 12 – 15

Recipe Note: Cranberry fruit salad can be served as a salad or dessert. Made with light cream cheese, cranberry fruit salad can be a very healthy dessert.
