Early Spring Salad Toss Recipe

2/3 cup
torn leaf lettuce
mushrooms, sliced thin
broccoli flowerets
green onions, sliced
kiwi, sliced
fresh strawberries, sliced
oranges, peeled, seeded and sectioned
poppy seeds
sunflower seeds
lemon juiced
Dijon type mustard
olive oil

Recipe Pan Type: salad bowl

Spring Salad Directions

Wash salad lettuce, drain well and tear into bite size pieces.
Put into a nice looking salad bowl.
Add sliced mushrooms, broccoli flowerets, sliced green onions, sliced kiwi, sliced strawberries, oranges, and Craisins.
Toss spring salad recipe well.
In small bowl combine, the honey, vinegar, poppy seeds, sunflower seeds, juice from lemon, mustard, salt, and oil.
Beat together with a wire whip until salad dressing part is well blended.
Pour salad dressing over the top of spring salad and toss lightly.

Recipe Serves: 6 – 8

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
