Organic Mandarin Medley Salad with steak

Enjoy this delicious blend as a healthy side dish, mix with your favorite additions for a cold summer salad.

1 cup organic sprouted rice
1 1/4 cups orange juice
1 1/4 cups water
1/2 cup chopped celery
1/4 cup chopped green onions
1/4 cup chopped red bell pepper
2 Tbsp. finely chopped parsley
1 can mandarion oranges ( reserve juice)
1/4 cup raspberry vinaigrette
1/4 chopped and roasted almonds, walnuts or pine nuts


Stove Top Temp: medium high

Mandarin Medley Salad Directions

Mandarin Rice Salad

Follow basic cooking method for the organic sprouted rice using 1/2 part water and 1/2 part orange juice for your liquid. When fully cooked, fluff with fork and chill in refregerator for an hour.
Combine chilled rice with celery, greenonions, red pepper, parsley and mandarin orange slices. Mix one part reserve mandarin juice and one part of your favorite rasperry vinaigrette salad dressing. Gently blend in to salad, Top with chopped nuts.
