Mexicana Beef

A Mexican-inspired dish using beef steak, white onions, bell peppers, and tomato soup. Quick and easy meal to prepare. Best served with rice or tortillas.

1 pound ground round steak
1/3 cup onion, chopped
1/3 cup green bell pepper, chopped
2 cloves garlic, minced
1 – 10.75 ounce can tomato soup, condensed
1 cup milk
2 cups whole kernel corn
1/3 cup black olives, sliced
3 cups rice, cooked
6 ounces American cheese, shredded
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Oven Temp: 350°
Recipe Cooking Time: to 40 minutes
Pan Type:   2 quart casserole

Mexicana Beef Directions

Preheat your oven.

In a large skillet brown the beef, onions, green pepper and garlic.
Drain off excess fat.
Add the soup, milk, corn, olives, cooked rice, 1 cup of the cheese, salt and pepper.
Mix well and pour into casserole dish.
Top mexicana beef casserole with remaining cheese.
Bake beef casserole for the allotted time.
Serve mexicana beef along with your favorite salad.
