Chicken Mole Recipe

3 tablespoon
2
1 large
2 cloves
3 cups
1 – 15 ounce
1/4 cup
1/4 cup
3 tablespoons
olive oil
chickens, cut up
onion chopped
garlic, chopped
thick and chunky salsa
can chicken broth
chili powder
creamy peanut butter
baking cocoa

Stove Temp: medium
Recipe Cooking Time: 30 minutes
Pan Type: skillet


Chicken Mole Directions

Heat the oil in skillet over medium heat.
Add the chicken pieces and brown well on all sides.
Remove chicken to platter.
Add the onions and garlic to pan.
Cook about 5 minutes or until vegetables are tender.
Add the salsa, chicken broth, chili powder, peanut butter and baking cocoa.
Stir mole well.
Return chicken to pan.
Cook chicken mole over medium low heat for the allotted time or until chicken meat is tender and no longer pink in the middle.
Serve chicken over hot cooked white rice along with your favorite salad.

Note: I used boneless skinless chicken pieces in place of the whole chickens, about 4 1/2 pounds.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier.
