Favorite RecipeFavorite Chicken Enchilada Recipe

1 dozen
1 1/2 cups

1 small can
1 – 4 ounce
3 cups
1/2 cup
3 cloves
1/4 teaspoon
1/4 teaspoon
1/4 teaspoon
chicken
favorite kind of olive oil
burritos size flour tortillas
dairy sour cream
cream of chicken soup
sliced black olives
can diced green chilies
Mexican blend cheese, shredded
onion, chopped
garlic, minced
cumin
oregano
cayenne pepper

Oven Temp: 350°
Recipe Cooking Time: 30 minutes
Pan Type: 9" x 13" baking dish


Chicken Enchilada Directions

Preheat your oven.

Boil chicken and chop into pieces.
Place chicken into your favorite large mixing bowl.
In a skillet, sauté the onion and garlic in your favorite olive oil until tender. Add undiluted chicken soup, dairy sour cream, olives, chiles, cumin, oregano and cayenne pepper.
Remove 1 1/2 cups of sauce for top of enchiladas, set sauce aside. Add the chopped chicken and 1 1/2 cups of the cheese to the rest of chicken soup mixture.
Lay flour enchilada tortilla onto the bread board, put a large spoon of chicken mixture in the center and roll it up.
Put chicken enchiladas into baking pan.
Repeat until pan is full.
You may need to squeeze tightly and put one chicken enchilada across the end to fill pan up.
Add remaining 1 1/2 cups of cheese to the reserved 1 1/2 cups soup mixture and stir.
Spread over top of chicken enchiladas.
Bake the enchiladas uncovered.
Allow to set for 10 minutes in the pan before serving.
Serve this favorite chicken enchilada recipe along with your favorite salad.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
