Good Chicken Enchilada Recipe

1/3 cup
2 (4 ounce) cans
1 large
1 large can (28 ounces)

2 teaspoons
1/2 teaspoon

chopped green chile peppers
clove garlic, crushed and minced
tomatoes, drained, reserve juice
chopped onions (2 large onions)
salt
oregano
cooked shredded chicken
good sour cream
shredded cheddar cheese
good and fresh corn tortillas

Oven Temp: 350°
Recipe Cooking Time: 20 minutes
Pan Type: 9" x 13" baking dish


Chicken Enchilada Recipe Directions

Preheat your oven.

In a skillet over medium high heat add 1 tablespoon of oil.
Add the good fresh chile peppers and garlic.
Sauté until garlic is soft but not browned.
Break up tomatoes and add to chile peppers along with the chopped onions, 1 tsp salt, oregano and 1/2 cup of the reserved tomato liquid.
Simmer the enchilada sauce uncovered until thick, takes about 30 minutes.
If it gets too thick, add a little more of the tomato liquid or a little water.

Remove enchilada tomato sauce from heat and set aside.

In a bowl combine the chicken, sour cream and shredded cheese. Heat 1/3 cup of oil in a skillet over medium-high heat until hot.
Using tongs, dip enchilada tortillas in hot oil for a few seconds until they become limp.
Drain the enchilada tortillas well on paper towels.
Fill enchiladas with the chicken mixture.
Roll up and put chicken enchiladas side by side, seam-side down into a good baking dish.

Pour tomato sauce over chicken enchiladas, sprinkle with cheese and bake for the allotted time.
Serve chicken enchilada along with your favorite salad and beverage.
