Beef Enchilada Recipe

1 cup
1 pound
1 teaspoon
1 – (7 ounce) can
4 cups
2 teaspoons
1 (12 ounce)
1/2 cup
3/4 cup
2 cups
1/2 cup
1/3 cup
chopped onion
sirloin steak, cut into bite size strips
minced garlic
diced green Chile peppers
tomato sauce, divided
chili powder
package corn tortillas
fresh salsa
chopped black olives, drained
shredded Cheddar cheese
sour cream
chopped green onion

Oven Temp: 350°
Recipe Cooking Time: 30 minutes
Pan Type: 9" x 13" baking dish


Beef Enchilada Directions

Preheat your oven and oil the baking dish.

In a skillet over medium heat, sauté the onions until almost translucent.
Stir in beef, garlic and chile peppers. Continue cooking until the beef is no longer pink.
Drain off the liquid from beef.
Pour in the tomato sauce and chili powder.
Mix thoroughly and heat through.
Remove from heat.
Spoon a little of the beef meat mixture into a corn enchilada tortilla. Next, add a small amounts of salsa, cheddar cheese and olives.
Fold the enchilada up and place in the prepared casserole dish. Repeat for the remaining enchilada tortillas using up all of the beef mixture.
Reserve 1/2 cup of cheddar cheese for topping.
Pour the other half of the tomato sauce and sour cream over all of the enchiladas.
Top beef enchiladas with green onions and 1/2 cup of reserved cheddar cheese.
Serve beef enchilada along with your favorite salad and beverage.
