Any Day Enchilada Recipe

1 package dry
1 – 8 ounce can
1 1/2 cups
1 pound
1 large
2 cloves
10 – 8"
1 cup
1 – 4 ounce can
16 ounce
16 ounces
enchilada sauce mix
tomato sauce
water
lean ground beef
onion, chopped
garlic, minced
flour tortillas
sour cream
sliced black olives
cheddar cheese, shredded
Monterey Jack cheese, shredded

Oven Temp: 350°
Recipe Cooking Time: 30 minutes
Pan Type: 9" x 13" baking dish


Any Day Enchilada Directions

Preheat your oven.


Combine the sauce mix, tomato sauce and water in a 2 quart saucepan.
Bring to a boil, reduce heat and simmer uncovered 10 minutes. Set aside while preparing other any day ingredients.
Brown the beef, onion and garlic in a large skillet over medium heat.
Drain the excess fat.
Add 1/2 cup of the enchilada sauce mix to the meat and mix well.
Add 2 cups of the cheddar cheese and 2 cups of the Monterey Jack cheese to meat mixture and stir any day recipe.
Lay an enchilada tortilla on a plate and spread with sauce.
Spoon the meat mixture down the middle of enchilada flour tortilla.
Roll tortillas tight and lay seam down into pan.
Pour remaining sauce on top of tortillas.
Top with remaining cheese and black olives.
Bake any day enchilada recipe in a preheated oven.
Let enchilada rest 10 minutes after removing from oven before serving. Serve any day enchiladas with 2 tablespoons sour cream on top of each enchilada and with your favorite salad.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
