Chicken and Bean Burrito Recipe

1 tablespoon
1 pound
1/4 cup
1 clove
1 package
3/4 cup
1 – 16 ounce can
8 burrito size
6 ounces
2 cups
4 large
1 – 2 1/4 ounce can
olive oil
chicken breast boneless and skinless
onion chopped
garlic, minced
burrito seasoning mix
water
refried beans
tortillas, heated
Monterey Jack cheese, shredded
iceberg lettuce, shredded
green onions, sliced
black olives, sliced and drained

salsa
sour cream

Stove Temp: medium/low
Recipe Cooking Time: 20 minutes
Pan Type: skillet


Chicken and Bean Burrito Directions

Cut boneless skinless chicken breast into thin strips.
Heat olive oil and add the chicken, onion and garlic.
Cook over medium heat until chicken is no longer pink and vegetables are tender.
Add burrito seasoning mix and water to chicken and stir to blend.
Bring chicken burrito mixture to a boil reduce heat and simmer until mixture is thickened.
Stir chicken for about 5 minutes.
Add the refried beans and stir, cook until heated through, takes about 3 minutes.
Place about 1/2 cup of chicken and bean mixture on the center of a warmed flour burrito tortilla.
Top burrito with cheese, shredded lettuce, green onions and black olives.
Serve chicken and bean burrito along with your favorite salsa and sour cream.
