Fried Tuna and Zucchini Cakes Recipe

Fried Zucchini and Tuna Cakes

Lightly fried in olive oil, the shredded zucchini, tuna and green peppers blend together for a delightfully delicious meal.

1/2 cup onion, finely chopped
1 tablespoon olive oil
1 (6 1/2 ounce) can tuna, drained
1/4 cup green pepper, chopped
3/4 cup shredded zucchini
2 large eggs
3/4 cup (Panko) bread crumbs
1/3 cup parsley, snipped
1/8 teaspoon ground black pepper
2 tablespoons oil for frying

Stove Temp: medium
Recipe Cooking Time:
Pan Type: large skillet
 

Directions for Fried Tuna Zuccini Cakes

In a skillet cook the zucchini, onion, green pepper in olive oil just until tender.
Remove from heat and transfer to a bowl.
Add the eggs and beat lightly.
Stir in the tuna, cooked zucchini, peppers and onion, parsley, pepper and 1/2 cup of the bread crumbs.
Stir to combine.
Shape into 6 patties and roll each in the remaining bread crumbs.
Heat the remaining oil.
Fry Tuna Zucchini Cakes until golden brown.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
