Tuna Veggie Cakes Recipe

1/2 cup
1 tablespoon
1 – 6 1/2 ounce can
1/4 cup
3/4 cup
2 large
3/4 cup
1/3 cup
1/8 teaspoon
2 tablespoons		 onion, finely chopped
olive oil
tuna, drained
green pepper, chopped
shredded zucchini
eggs
fine cracker crumbs
parsley, snipped
ground black pepper
oil for frying

 

Stove Temp: medium
Recipe Cooking Time: 25 minutes
Pan Type: large skillet
 


Tuna Veggie Cakes Directions

In a skillet cook the veggies, onion, green pepper in olive oil just until tender.
Remove from heat and transfer to a bowl.
Add the eggs and beat slightly.
Add tuna, zucchini, parsley, pepper and 1/2 cup of the bread crumbs.
Stir to combine.
Shape into 6 cake patties and coat each with remaining bread crumbs.
Heat the remaining oil.
Cook tuna veggie cakes until golden brown.

Recipe Serves: 3 to 6
