Tuna Burgers with
Chipotle Sour Cream Recipe

Tuna Burgers with Chipotle Sour Cream Recipe and more free recipes in this meat section of kiss recipes. Chipotles are jalapeños that have been smoked and dried. Chipotles stewed in adobo sauce—tomato, paprika, onions, garlic, bay, oregano and vinegar—make for a warm and smoky condiment with a touch of sour.

Tuna Burgers with Chipotle Sour Cream

1 tablespoon plus 1 teaspoon chopped garlic
2 tablespoons chopped fresh cilantro
2 pounds tuna steak, trimmed and finely chopped
2 tablespoons ground cumin
2 tablespoons chili powder
1 tablespoon salt
2 tablespoons vegetable oil

Chipotle sour cream:

2-3 canned chipotle peppers in adobo sauce, finely chopped (see Notes)
1 cup sour cream
1/4 teaspoon salt

Directions for the Tuna Burgers

1. In a medium bowl, combine garlic, cilantro,tuna, cumin, chili powder and salt. Mix thoroughly. Form tuna mixture into eight patties 1 to 1½ inches thick, and coat with oil. Broil or grill over a high fire, turning once, until browned on the outside but still rare on the inside, about 2 minutes per side, or until desired doneness.

3. In a small bowl, add chipotle peppers to sour cream in increments, stirring and tasting, to desired heat. Stir in salt and combine thoroughly. Slather burgers with sour cream and serve.

Notes

Chipotles in Adobo Sauce:

Chipotles are jalapeños that have been smoked and dried. Chipotles stewed in adobo sauce—tomato, paprika, onions, garlic, bay, oregano and vinegar—make for a warm and smoky condiment with a touch of sour. Cans of chipotles in adobo sauce are readily available in the Mexican section of your supermarket. The residual peppers can be frozen to lengthen their shelf life, but better yet, learn to use them more frequently. Spread them sparingly on a grilled cheese or use them as a rub for just about any grilled meat.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt.
