Tomato Based Snapper Recipe

1 pound
2 tablespoons
1/4 cup
1 cup
1 small
16 ounce
1/8 teaspoon
1 tablespoon
1/4 teaspoon
1/8 teaspoon
1/2 cup		 red snapper
olive oil
celery, sliced thin
fresh mushrooms, sliced
onion, chopped
stewed tomatoes
tarragon
lemon juice
salt
pepper
parmesan cheese, grated

 

Oven Temp: 400°
Recipe Cooking Time: 25 minutes
Pan Type: 9" x 9" baking pan


Snapper Recipe Directions

Preheat Oven.

Cut red snapper fish into serving size pieces and layer in bottom of pan. Heat the oil in skillet.
Add the onions, celery and mushrooms, sauté until tender.
Add the tomatoes, tarragon, lemon juice, salt and pepper.
Cook snapper over medium heat for 5 minutes.
Pour tomato mixture over the tomato based snapper and bake for the allotted time. Remove from oven and sprinkle with cheese and serve with your favorite side dish.
