Hawaiian Fish Skewer Recipe

2 small
1 large
18 large
2 tablespoons
1/4 cup
2 tablespoons
1/4 cup
1/4 teaspoon
2 cloves
mahi mahi or swordfish
zucchini, sliced 1/4“ thick
red onion, cut into 1” pieces
green pepper, cut into 1 “ pieces
olive oil
lemon juice
gingerroot, grated
soy sauce
garlic, minced


Oven Temp: broil
Recipe Cooking Time: 10
Pan Type: broiler pan

Hawaiian Fish Recipe Directions

Cut Hawaiian fish into cubes.
Mix the oil, lemon juice, gingerroot, soy sauce, pepper and garlic in a large bowl with a tight fitting lid.
Put the hawaiian fish into marinate.
Cover and turn bowl to coat fish.
Put fish into refrigerator for 4 hours or longer to marinate.
Turn the fish occasionally.
Remove fish from hawaiian marinate.
Add the vegetables and mix gently.
Thread fish and vegetables onto skewers.
Spray broiler rack with cooking spray.
Place skewers 6” from heat.
Broil until fish color is opaque.
Turn skewers carefully to cook fish on all sides.
Serve this Hawaiian fish skewer recipe with rice, fresh pineapple and your favorite side dish.

Note: Works well on barbecue.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
