Lamb Kabobs Recipe

1 large
3 medium

1 pint
3/4 cup
3/4 cup
1/2 teaspoon
1/2 teaspoon
1/2 teaspoon
1/2 teaspoon

boneless leg of lamb
egg plant, chunked
green peppers
onions, cut into eighths
cherry tomatoes
wine vinegar
olive oil
garlic powder



Oven Temp: broil
Recipe Cooking Time: 20 minutes
Pan Type: broiler pan

Lamb Kabobs Directions

Cut the lamb into 1" chunks and place in a large bowl with a lid. Mix the olive oil, vinegar, oregano, basil, salt and garlic powder. Pour over the meat and turn once to coat the lamb meat.
Marinate meat for at least 12 hours, overnight if possible.
Drain lamb and reserve marinate.
In a 2 quart sauce pan bring 2 cups of water to boil.
Add the onion and green peppers, remove from heat and let set for 5 minutes.
On metal kabob skewers string the meat alternating with egg plant, onions and green peppers leaving a small space in between to allow for even cooking.
Place kabob skewers on pan.
Brush the meat with marinade.
Broil 5 - 6" from the top of broiler.
Broil first side for 3 to 5 minutes, turn and baste with marinade and cook for 3 to 5 minutes on the other side or until desired doneness.
Put the cherry tomatoes on kabob skewers and broil for 2 to 3 minutes.
Serve kabobs with your favorite beverage.

Note: Good served over hot cooked rice.
Can substitute zucchini instead of egg plant if desired.
