Tasty Almond Breaded Chicken Recipe

4 whole

chicken breast, boneless, skinless
salt
Panko
sliced almonds
flour
eggs
oil for frying
chicken broth
cornstarch
Mirin
soy sauce
shredded lettuce
slivered almonds, toasted
green onions, sliced

Oil Temp: 375°
Recipe Cooking Time: 3 to 4 minutes
Pan Type: deep fryer


Almond Breaded Chicken Directions

Slice the chicken breast in half to make 8 thin breast pieces. Sprinkle salt on breast.
Combine the Panko and sliced almonds.
Place the flour on a plate.
In a small dish beat the eggs until fluffy.
Dredge one piece of chicken at a time into the flour.
Then dip into beaten egg and then coat with Panko mixture. Heat the oil.
Fry almond breaded chicken in hot oil for the allotted time or until golden brown. Remove breaded chicken from oil and drain on paper towels.
Layer shredded lettuce on serving plate.
Cut breaded chicken into bite size pieces and layer on lettuce. In a small saucepan combine the chicken broth, cornstarch, Mirin and soy sauce.
Bring mixture to a boil, reduce heat and cook until thickened. Over the top of breaded chicken, pour sauce.
Sprinkle your tasty almond breaded chicken recipe with the toasted almonds and green onion. Chicken is great served with rice and your favorite side dish.

Recipe Note: Mirin is a sweet cooking rice wine.
Panko is Japanese bread crumbs, both can be found in oriental food section at your regular grocery store.
