Spicy Lime Pineapple Chicken Recipe

1/4 cup
2 teaspoons
1/4 cup
1/4 cup
1/2 teaspoon
1/4 teaspoon
4 cloves
6 – 8 boneless
1 – 20 ounce can
1 large
6 medium
olive oil
lime peel, grated
lime juice
pineapple juice
salt
ground black pepper
garlic, minced
chicken breast, halves
pineapple chucks, reserve juice
red bell pepper
green onions

 

Oven Temp: 350°
Recipe Cooking Time: 40 minutes
Pan Type: 9" x 13" baking dish


Spicy Lime Pineapple Chicken Directions

Preheat Oven.

In a small bowl combine, olive oil, grated lime peel, lime juice, pineapple juice, salt, pepper and minced garlic.
Mix spicy lime pineapple ingredients well.
Put chicken in a gallon size freezer bag.
Pour spicy marinate over chicken and turn bag over to coat chicken. Place in refrigerator to marinate 1 hour.
In the meantime, seed peppers.
Cut peppers into strips.
Thin slice the green onions.
When ready to bake, remove chicken from marinate.
Place chicken in dish.
Bake for 20 minutes.
Remove spicy lime pineapple chicken from oven and drain off fat.
Arrange cut peppers on chicken.
Scatter sliced onions on top of peppers.
Top with un drained pineapple chunks.
Cover chicken.
Return spicy chicken to oven and continue to bake for second amount of allotted time or until chicken is no longer pink in the middle and juices run clear.
Serve chicken with rice and your favorite side dish.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier.
