Poached Chicken Recipe

1 –   3 to 4 pound
1/2 cup
1 large
1 large
1 teaspoon
1/4 teaspoon
1/4 teaspoon
1/2 teaspoon
4 cups
whole chicken
celery, sliced
onion, chopped
carrot, sliced
dried parsley
ground black pepper
sage
salt
water

 

Stove Temp: low
Recipe Cooking Time: 45 minutes
Pan Type: stock pot


Poached Chicken Directions

Cut up chicken.
Place chicken in skillet.
Add sliced celery, chopped onion and sliced carrot on top of chicken.
Sprinkle dried parsley, ground black pepper, sage and salt on top of the vegetables and chicken.
Cover with water.
Bring to a boil.
Cover and simmer (poached) for allotted time or until chicken is tender.
Remove the chicken from the broth to cool.
Pour the broth into another container.
When broth is cool, cover and refrigerate for later use.
Broth can be frozen as well.
Skim the fat off of the broth after it has chilled for a lighter choice broth.
When the chicken is cool enough to handle remove meat from the bones.
Place poached chicken in plastic bag and refrigerate.
When ready to use, cut into cubes.
You now have your poached chicken ready for your favorite casseroles, enchiladas etc.
Note: You can use 2 pounds whole chicken breast in place of whole chicken

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier.
