Healthy Chicken Recipe

2 tablespoons
1 large
2 cloves
2 tablespoons
1/2 teaspoon
1/4 teaspoon
1 1/2 cups
1/2 cup
1 – 2
1 – 4 ounce can
1 1/2 cups
olive oil
chicken thighs
onion, chopped
garlic, minced
ground black pepper
dairy sour cream
jalapeño peppers, seeded, minced
green chilies, diced
Mexican Blend cheese, shredded


Oven Temp: 350°
Recipe Cooking Time: 30 minutes
Pan Type: 9" x 13" baking pan

Healthy Chicken Recipe Directions

Preheat Oven.

Heat the oil.
Brown the chicken.
Arrange browned chicken in pan.
Remove all but 1 tablespoon oil from pan.
Add onions and garlic to skillet and cook until tender.
Add the flour, salt and pepper to skillet and stir to make a paste. Add the milk and sour cream.
Cook over medium heat until mixture is smooth and starts to thicken.
Add healthy jalapeños and diced green chilies to flour mixture.
Put chicken in pan.
Pour flour mixture over the chicken.
Top chicken mixture with cheese and bake for the allotted time. Serve with rice or your favorite side dish.

This basic healthy chicken recipe will be a crowd pleaser for all ages of chicken lovers.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
