Grilled Ginger Chicken Breast Recipe

Grilled ginger chicken served with asparagas and spinach simmered in ginger sauce.

Ginger Chicken with Asparagas

1/2 cup
2 tablespoons
2 tablespoons
1/2 teaspoon
1/2 teaspoon
1 clove
1 tablespoon
4 boneless skinless
olive oil
lemon juice
soy sauce
dry mustard
gingerroot, grated
garlic, minced
fresh cilantro, chopped
chicken breast halves

Grill Temp: hot
Recipe Cooking Time: 35 minutes

Ginger Chicken Directions

Preheat coals or gas grill.

In a small saucepan combine, olive oil, lemon juice, soy sauce, dry mustard, gingerroot and minced garlic.
Cook chicken over low heat for 5 minutes, stirring occasionally.
Remove half of ginger sauce and set aside.
Place chicken breast on hot grill.
Cook ginger chicken 15 to 20 minutes on first side.
Turn and baste with ginger sauce.
Cook chicken 10 minutes.
Turn and baste and cook 5 minutes longer or until chicken juices run clear when pierced with fork.
Transfer chicken to serving platter.
Add chopped cilantro to remaining teriyaki sauce and pour over grilled ginger chicken breast.
Serve this chicken recipe with rice pilaf or steamed rice and your favorite salad.

Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup.
