Chicken Pot Pie 2 Recipe

1 – 3 1/2 pound
2 tablespoons
1 large
3 large
2 stalks
3 tablespoons
1 cup
1/2 teaspoon
1/2 teaspoon
1/4 teaspoon
1 1/2 pounds
1 tablespoon
1/4 cup
1/3 cup
1/8 teaspoon
1/2 teaspoon
olive oil
onion, chopped
chicken broth
bay leaf
dried sage
ground black pepper
potatoes, about 4 medium
butter, real butter is best
plain yogurt


Oven Temp: 400°
Recipe Cooking Time: 30 minutes
Pan Type: large dutch oven

Chicken Pot Pie Directions

Preheat Oven.

Cut chicken into serving pieces and remove skin.
Heat olive oil in Dutch oven.
Add the chicken.
Cook chicken 5 minutes on each side.
Add onions, carrots and celery.
Reduce heat, cover and cook 10 minutes.
Add the flour and stir to blend.
Add chicken broth, bay leaf, sage, thyme and black pepper. Cover and simmer for 20 minutes.
Remove chicken from pot.
Take chicken off of the bone and cube.
Return cubed chicken to Dutch oven.
Cover and simmer 10 minutes.
Peel and quarter potatoes.
Place potatoes in a 2 quart saucepan and cover with water and bring to a boil.
Reduce heat and cook 20 minutes or until tender.
Drain potatoes.
Place potatoes into a large bowl.
Mix and add butter, milk and salt.
Transfer chicken and vegetables to casserole.
Add the yogurt to the chicken cooking liquid and mix.
Pour over chicken.
Spoon the mashed potatoes around edges of casserole. Sprinkle mashed potatoes with paprika.
Bake this chicken pot pie recipe uncovered for allotted time or until bubbly.
Serve chicken pot pie with your favorite warm homemade bread.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
