Chicken Gumbo Recipe

1    3 to 4 pound
1 large
1 large
3 stalks
1 cup
2 cloves
1/4 cup
3 tablespoons
1 1/2 teaspoons
1/2 cup
whole chicken
onion, chopped
green bell pepper, chopped
celery, sliced
okra, chopped
garlic, minced
gumbo file powder
Worcestershire sauce


Stove Temp: medium
Recipe Cooking Time: 45 minutes
Pan Type: stock pot

Chicken Gumbo Directions

Place chicken in pot.
Cover with water.
Boil chicken until tender.
Cool and de-bone chicken.
Save the broth.
In a skillet, sauté the onions, celery, garlic and green bell pepper until tender, add the flour stirring to make a paste and cook until browned.
Add the chicken broth.
Bring to a boil.
Reduce heat.
Add Worcestershire sauce and okra.
Cook for about 20 minutes or until okra is tender.
Add gumbo file powder.
Serve chicken gumbo over rice and with your favorite crackers.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
